20-Minute Dinners for Busy Home Ed Families (and Anyone Short on Time)
Let’s be honest, “20-minute dinners” don’t always mean a peaceful 20 minutes.
They mean:
- someone asking “what’s for dinner?” every 3 minutes
- a toddler hanging off your leg
- someone suddenly needing the toilet right now
- and at least one child who was “not hungry” 5 minutes ago but is now starving
So these meals? They’re realistic. Flexible. And designed to work even when life is… loud.
A Quick Note (That Makes ALL the Difference)
If you take one thing from this post, let it be this:
A little prep on the weekend = sanity during the week.
Even just an hour on a Sunday evening (when the kids are asleep or watching something) can change everything:
- marinate chicken for a few days
- make a batch of veggie-packed sauce and freeze in cubes (roast the veggies of your choice with oil and then blitz)
- chop or buy pre-chopped frozen veg
- cook extra rice
Future-you will be very grateful.
1. Basic Family Pasta (Customisable + Fuss-Free)
This is the go-to when time is tight and patience is thinner than spaghetti.
What to do:
- Boil pasta according to packet instructions (family of 5: about 500–600g).
- While that’s cooking:
- Fry 2 cloves of garlic in oil.
- Add passata.
- Season with salt, pepper, and dried basil (or fresh if you have it).
- Optional twist:
- Add turmeric, cumin, coriander if you like a masala-style flavour.
- Add:
- 1–2 cubes of pre-made veggie sauce (if you’ve got it hidden in the freezer 👀)
- A splash of pasta water to loosen the sauce.
- Drain pasta, mix into sauce, drizzle with olive oil.
Extras (if you have time/energy):
- Air fryer garlic bread
- Cucumber slices or a quick salad
- Pre-marinated chicken (air fried or pan-fried)
👉 Even without extras, this works. And yes… someone will still ask for snacks while you’re cooking it.
2. One-Tray Sheet Pan Dinner
Minimal effort. Maximum reward. One tray = less washing up (which already makes this a winner).
What to do:
- Add to a large tray:
- Chicken or fish
- Veg: peppers, onions, mushrooms, broccoli (or frozen mixes—lifesavers!)
- Toss with:
- Oil
- Garlic powder, paprika, coriander, salt, pepper
- Lemon juice (if you have it)
- Add a whole garlic bulb (slice the top, drizzle oil, loosely cover with foil).
- Roast until cooked.
Serve with:
- Air fryer chips
- Corn on the cob
- Salad
- Bulgur or rice (if you’ve got leftovers ready)
👉 Warning: This is usually when someone walks in asking, “Is it ready yet?”… while it’s clearly still raw.
3. Keema & Guac Wraps (Quick + Filling)
Not traditional. Not fancy. Just fast, tasty, and filling.
What to do:
Guac:
- Avocado + garlic + lemon juice + olive oil + salt + pepper + fresh coriander
Keema:
- Fry minced meat with 1–2 cloves garlic.
- Add:
- Paprika, cumin, coriander
- Optional turmeric (especially if you want leftovers for another dish)
- Add tomato puree (if you have it) and fry off the spices.
Assemble:
- Warm wraps
- Spread guac
- Add keema
Optional extras:
- Salad
- Air fryer fries
- Add beans for extra nutrition (not breakfast baked beans… let’s not do that here 😅)
4. Quick Chicken or Fish Wraps
Faster than takeaway (as long as you don’t get distracted halfway… which is very possible).
What to do:
- Season chicken or fish with:
- Garlic powder, paprika, coriander, salt, pepper
- Optional chilli
- Cook:
- Air fryer or oven
- (No marination time? No problem—just cook it)
In a rush? (Forgot to defrost the chicken!)
- Defrost in the air fryer slightly so seasoning sticks
- Or cook from frozen and adjust time
- I have previously boiled frozen chicken and then stir fried it with spices as I was in a rush!
Side Note: I know guidance says not to wash chicken, but in our family we do, either before freezing or before cooking for personal preference (not for germs) but to take away bits of blood or fragmented bones etc. I always fully clean and disinfect the sink, sides, and any utensils afterwards, as part of my normal kitchen routine.
Assemble:
- Warm wraps
- Add protein
- Add salad + sauces
Serve with:
- Fries
- Corn cob (air fryed or boiled)
- Anything quick
👉 Pro tip: Wash as you go… unless you enjoy facing a mountain of dishes later.
5. Keema & Mushroom Fried Rice
Perfect for using leftovers, or pretending you planned ahead.
What to do:
- Cook rice (or use leftover rice if you’re winning at life).
- In a pan:
- Fry 4 cloves garlic in oil
- Add 500g minced meat and brown
- Add spices:
- ½ tsp turmeric
- 4 tsp coriander
- 2 tsp cumin
- ½ tsp garam masala (at the end)
- Salt to taste
- Optional chilli powder
- Add sliced mushrooms (and green chillies if you like).
- Add cooked rice and mix gently.
- Top with:
- Fresh coriander
- Crispy fried onions
Serve with:
- Simple salad
- Lemon drizzle
👉 This is also the meal where someone says “I don’t want rice”… and then eats two bowls.
6. Fish Finger wraps
This one may be controversial but exactly what it says above. Especially when you are strapped for time!
- Air fry fish fingers
- Prepare a salad
Assemble:
- Warm wraps
- Add fish fingers
- Add salad + sauces (my favourite is Oceans Spray tartare sauce)
Serve with:
- Fries
- Corn on the cob
7. Speedy Chicken & Veg Stir Fry
- Use pre-cut chicken + frozen veg
- Stir fry with garlic, soy sauce, honey, ketchup and chilli (optional)
- Serve with rice or noodles
8. Simple Chicken Curry (about 30 minutes)
This one may take around 30 minutes, but curry is one of those meals where once everything is in the pot, you can step away and let it do its thing while you deal with everything else life throws at you (including snack requests and unexpected toilet emergencies).
1. Base
- Slice 2–3 medium onions and 4 garlic cloves
- Fry in 3 tbsp oil until soft and lightly golden (use your eyes for measurement.. You need enough to be able to cook the base and spices without it drying out)
Note: I know it seems like a lot but remember the amount of portions you get out of a curry so it is evenly distributed and when it goes to the top it is not because there’s too much but because oil and water naturally separate.
2. Spices
Add and stir through:
- ½ tsp turmeric
- 4 tsp coriander
- 2 tsp cumin
- 1 tsp garam masala
- Optional: 3–4 tsp chilli powder (I add this at the end for adults once I’ve set aside the kids’ portion)
- Optional: 1-2 tsp of tomato puree.. Especially if you don’t have tomatoes.
3. Chicken
- Add 1 medium to large chopped chicken or 500g chicken fillets (your local halal butcher will be able to chop the chicken into curry pieces)
- Chicken on the bone is my preference for flavour when I have time
4. Tomatoes
- Add 2 chopped tomatoes (optional)
- Optional: fresh green chillies if you like heat
- Stir and cook for about 5 minutes
5. Simmer
- Add enough water to just cover the chicken
- Bring to the boil with the lid on
- If using potatoes, add them at this stage before boiling
Once boiling:
- Keep it boiling for about 10 minutes
- Then reduce to a gentle simmer for another 5 minutes or so, until the chicken (and potatoes if used) are cooked through and the sauce has thickened. If you’re in a rush and you don’t have time to make it thick, just add a corn flour slurry. I promise I won’t tell my ancestors!
6. Serve
- Garnish with fresh coriander
Serve with:
- Naan
- Flatbread
- White rice (I’m not a fan of brown rice with curry but if you are that is absolutely fine!)
👉 If you’re having rice, get it cooking while the curry is on the boil stage, everything comes together at the same time and suddenly dinner feels like it cooked itself.
9. Masala Omelette Wraps
- Whisk eggs with spices + coriander (you can add onions, chillies, veg, cheese etc)
- Cook like an omelette
- Wrap in flatbread with salad
Great for those “we have nothing in the fridge” days.
10. Za’tar Pizza – this is probably the fastest one
- Mix a premade za’tar mix with good quality olive oil (we use Zaytoun Palestinian Olive Oil)
- Spread it onto a flatbread (Our local Arab and Kurdish shops sell them fresh) or you can do a tortilla wrap.
- Optional: Add grated cheese mozzarella or mild cheddar will work
- Bake it in the oven until it is slightly crispy or if you added cheese that is browned.
Serve with:
- Salad
- Chips/fries
My daughter is severely allergic to sesame so we still end up having to make something else anyways and my youngest isn’t a fan yet as he prefers rice or pasta dishes… but the rest of us do really enjoy it!
